Ingredients:
1/2 cup butter room temp
1 1/2 cups brown sugar
2 large eggs, beaten
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
1/4 teaspoon vanilla essence
3/4 teaspoon baking soda
3 pureed bananas, very ripe
Method-
Cream butter and sugar, add eggs gradually till sugar is
mixed thoroughly (I used brown sugar, can be replaced by castor sugar also),
finally add vanilla essence and mix. Sift flour, baking soda, salt together, mix gently with the creamed butter.
Puree the bananas and add baking soda to it. Add the banana mixture to the
batter and then add milk if the batter seems dry. Pour the batter in the
greased bundt pan. Place in 180°C preheated oven and bake for 35-40 min or till
the knife comes out clean. Dust with vanilla sugar if desired.
