Dry Fruits and Fruit Candies all in CAKE



 

 

Fruit n Nut Cake

Preparation time- 30min
Baking time- 60 min
Ingredients:-
·         All purpose flour- 1 ½ cup
·         Powder Sugar- ¾ Cup
·         Butter – ¾ cup; if using clarified butter – ½ Cup
·         Egg-2
·         Milk- ¾ cup
·         Baking Soda- 1/2tsp
·         Baking powder- 1tsp
·         Salt- ¼ tsp
·         Dry fruits – Cashew, Almonds, Raisins, Walnuts – 1 ½ cup
·         Fruit Candy- 1 cup
Method:-
Soak all dry fruits in 1tsp milk/ orange juice for 5-6 hrs. Chop them and keep aside. Sift the flour with baking soda, salt and baking powder twice hence mixing thoroughly.  Butter the sugar and then start adding egg gradually keeping it blending at low.  Start adding flour and milk gradually and mix thoroughly so as no lumps are left. Finally fold in the dry fruits and candied fruits. Preheat the oven at 180°C.  Pour the batter in greased cake could. Bake for 60 min. Cool on wire rack. Dust some icing sugar  before eating J.
