Cherry Cinnamon cake




Preparation time- 20 min
Cooking time Cake – 35 min
Liquor topping- 30 min
Ingredients-
For cake
·         1 cup Flour (maida)
·         ¼ tsp baking Soda
·         ½ tsp baking powder
·         ½ tsp ground cinnamon
·         1/3 cup Brown Sugar
·         2 eggs
·         4 tbsp milk
·         ¼ cup butter melted
·         250 g deseeded fresh cherries
For crumble topping
·         1/3 cup flour
·         ¼ tsp ground cinnamon
·         ¼ cup brown sugar
·         25g butter diced
For Liquor Topping
·         250 g cherry
·         1 cup sugar
·         Red wine/ Rum- feel free to experiment

Preheat the oven to 180°C . Sift flour, Cinnamon powder, baking soda, baking powder in a bowl. In other bowl mix eggs, milk and butter. Beat well and then combine with flour mixture properly. Pour it in greased cake tin. Top it with cherries, press them a bit in the batter.
For crumble topping mix all the ingredients, rub in the butter with your fingers to make a crumb-like mixture, then work the mixture until it comes together in pea-sized pieces. Scatter the topping over the cherries. Bake for 30-35 minutes or until the toothpick comes clean. Leave it in the tin to cool.
Bring all the liquor ingredients to boil all the liquor ingredients until thick on medium/ low flame.Cool the cake and layer out the liquor topping. Serve fresh or cool it in the fridge for some sticky taste
